Recipe Share – Crustless Quiche.

Broccoli Cheddar Crustless Quiche

3-4 cups broccoli florets
12 eggs
2 cups milk
1 tsp Italian seasoning
1/4 tsp garlic powder
a few dashes of Tabasco (optional)
salt and pepper to taste
2-3 cups shredded cheddar cheese

Preheat the oven to 375 degrees.

Cook the broccoli by steaming or blanching, and allow it to cool while you prepare the rest of the ingredients.  To steam in the microwave: put the broccoli in a microwave-safe bowl, add 3 Tbs water, cover tightly with plastic wrap (don’t allow the wrap to touch the broccoli), and nuke on full power for 2 minutes.  Drain and set aside.

In a bowl whisk together the eggs, milk, hot sauce and seasonings until combined.

Generously butter a casserole dish and distribute the broccoli evenly on the bottom.  Scatter the shredded cheese on top of the broccoli.  Carefully pour the egg mixture into the dish.

Bake at 375 for 50-60 minutes.

You can substitute any veggies or cheese you like in this recipe – and in whatever quantities you prefer.  If you want it cheesier, add more!   It would also be easy to add diced ham if you wanted.  I often half the recipe and serve it for dinner with a salad.
