Recipe Share – Banana Oat Muffins.

These were at the September 30 meeting.

Banana Oat Muffins

Dry ingredients:

3/4 cup whole wheat flour
3/4 cup AP flour
(or sub all 1.5 cups with whole wheat pastry flour)
1 cup rolled oats
1/4 cup plus 2 Tbs sugar
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt

Wet ingredients:

3/4 cup milk
1/4 cup vegetable oil
1 egg, beaten
1/2 tsp vanilla extract
3 ripe bananas, mashed

Preheat oven to 400 and prepare your muffin tray.  Combine dry ingredients.  In a separate bowl combine wet ingredients.  Mix wet and dry together, but do not overmix.  Distribute batter in muffin cups.  Bake at 400 for 18 minutes.  Makes 12 muffins.
