Recipe Challenge – Chili.

The idea behind the recipe challenge is for as many people as possible to make the posted recipe, and then to compare notes at the next MomTime meeting.  Feel free to leave comments with your results, modifications, who in the family loved it the most!

Family recipe submitted by Anna Clark.  This meal can also be made in the crockpot.

CHILI BLANCO

The BEST chili – great for guests and cold winters nights!  Great for freezing too!  (Hardest part is browning the meat – the rest you just open the cans and cook!)

1 lb. ground turkey
1 lb. ground pork
1 tsp. salt
1 ½ cup onions, chopped (can use frozen chopped)
1 green bell pepper, chopped (can use frozen chopped)
1 jalapeno, seeded and chopped (I use 2 with some seeds for extra heat)
3 garlic cloves (or more to your taste)
1 Tbsp. cumin
32-oz. chicken broth (33% less sodium)
2 15-oz. cans Cannellini beans, drained
1 15-oz. can Hominy, drained
1 10-oz. pkg. frozen white corn
2 4-oz. cans Hatch green chili, chopped (mild or hot to your taste)
1 Tbsp. Green Tabasco (I use about half a small bottle)
3 Tbsp. chopped cilantro

Brown meat together.  Add onions, bell pepper, jalapeno, garlic and cumin.  Cook until onions and peppers are done.  Add broth, beans, hominy and corn.  Bring to a boil and simmer for 45 minutes.  Before eating, add chilis, Tabasco and cilantro and simmer for additional 15 minutes.  Serve with cornbread – YUM!
